Eating on a budget doesn't mean your food is lacking in flavor, satisfaction or nutrition. When you see a sale on organic can beans or dried beans, stock up! Beans are a great source of protein, low in fat and high in fiber. Plus who doesn't love a really good chili while staying within your budget.
1 Tablespoon of Olive oil
1/2 of onion chopped
1/2 of green pepper chopped
2 cloves garlic minced
1 Tablespoon of ground Cumin
1 Tablespoon of Chili Powder
1 1/2 Teaspoon of Dried Basil
1 1/2 Dried Oregano
1 1/2 cups of Veggie crumbles (substitute-fresh chopped mushroom)
1 28oz. can of diced tomatoes (substitute-roasted/whole/puree)
1 can each of Kidney beans, Black bean, Northern bean (substitute-any bean) 1/4 Teaspoon of Paprika
Salt & Pepper to taste
Heat oil in a large saucepan over medium heat. Saute onions and garlic until tender. Stir in green pepper and chili powder. Cook until vegetables are tender, about 5 minutes. Stir in veggie crumbles, tomatoes and beans. Season with cumin, oregano, basil , salt and pepper. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.
