Making the most out of your veggies

If you have several different veggies that were bought for different recipes and you don't wont them to go bad; have yourself a "Roasting".




DIRECTIONS:

  1. Preheat oven to 425 degrees F.

  2. Prepare a baking sheet with parchment paper

  3. Place broccoli florets, mushrooms, zucchini, squash and bell peppers onto the prepared baking sheet. Add olive oil, garlic and season with salt and pepper to taste. Gently toss to combine.Place into oven and bake for 12-15 minutes, or until tender.

Give those veggies some company and roast a pan of potatoes

  1. Toss evenly sliced potatoes in just enough oil to coat.

  2. Add seasonings of choice and toss

  3. Place on a parchment-lined baking sheet

  4. Make sure the pan isn’t crowded -Roast for 20-25 minutes

Start your potatoes roasting about 10 mins. before putting your veggies in so they will finish at the same time.
