When you don't feel well... It's rainy or chilly outside... The day just didn't go your way...
Have a nice hot bowl of soup with your favorite veggies! It's one of those foods that bring comfort; it's also low calorie and very high in fiber with a good bit of protein.
*You can mix fresh veggies with canned veggies for a quick meal. The best of both worlds. Make sure you buy the no salt added- organic canned veggies when available so you are in complete control of the sodium content.*
Soup doesn't have to be a measured recipe, you just add what you want and make sure you have the amount of liquid you desire. It can be a thin soup or a thick stew...This is your creation!
Ingredients:
1 can of black beans (no salt)
1 can of green beans (no salt)
1 can of diced tomatoes (no salt)
2 ears of corn (corn cut off the cob)
2 baby bok choy (chopped)
1 cup of spinach (chopped)
1/2 onion (chopped)
1/2 carton of fresh cremini mushrooms (chopped)
1/2 to 3/4 cup quinoa
2 cloves of garlic (chopped)
2 Beyond Meat plant based Original Sausage Brats (sliced)
Salt, Pepper, Adobo seasoning to taste
Water to cover
-Add all of the ingredients to a large pot and cook on medium heat until sausage and quinoa are done. Season, taste and add more water if needed.
