Vegan Lentil Mushroom Burger

These burgers are gluten-free, made with simple ingredients, hardy and full of flavor.


Ingredients:

1 c. dry lentils, rinse and drain

3 c. water

1 tsp. salt

2 Tbsp. olive oil

8 oz. mushrooms, chopped finely

1 medium carrot, diced

1 medium onion, diced

2 Tbsp. fresh herb mix or green seasoning

1 tsp. pepper

1 tsp. smoked paprika

2 tsp. soy sauce

1 c. rolled oats, finely ground

1 c. vegan breadcrumbs



Instructions:

  1. In a medium pot add water, lentils and salt; boil for about 1 hour or until lentils are soft and most of the water has cooked out.

  2. Heat a skillet, add the olive oil and sauté mushrooms, carrots, onions, herbs, pepper, paprika and soy sauce. Cook until veggies are soft.

  3. Combine all cooked veggies, lentils, oats, and breadcrumbs in a large bowl until well combined.

  4. Form the mixture into patties. Makes about 10-12 burgers.


The burgers can be cooked right away on top of the stove in a little oil for about 2 1/2 mins. on each side or baked in the oven on 350 for about 12 mins.
