Vegan Peach Cobbler

Hot peach cobbler filling bubbling through the cracks of a perfectly golden crust. This recipe gives you a pleasant amount of sweetness with a hint of tart. A cobbler should have a bit more crust to peach filling ratio..It's a Cobbler not a Pie. The underside of the crust soaks up some of the peach filling while the top still has a crunch.


Filling Ingredients: 24 oz frozen peaches (or fresh) 2 1/4 cups water 2 tbsp cornstarch 1 cup organic sugar 1/2 tsp nutmeg 1 tsp cinnamon 1 tsp vanilla Crust Ingredients: 2 cups flour 1 cup organic sugar 1 tsp sea salt 2 tbsp baking powder 2 cups vegan milk

1 tsp vanilla 1 cup vegan butter

Instructions:

  1. Preheat oven to 350 degrees.

  2. For the filling, in a medium pot add all the ingredients and whisk until well combined.

  3. Add the peaches and cook on medium-high heat for about 15 min. until thickened.

  4. For the crust, in a large bowl mix the dry ingredients first, then whisk in the milk and vanilla.*excluding the butter.

  5. Melt the butter in a small bowl.


Assembly:

  1. Pour the batter in an ungreased baking pan/dish.

  2. Pour the melted butter over it.

  3. Lastly, pour peach filling on top.

  4. Bake for 45 min or until crust is golden brown.



Enjoy topped with vegan vanilla ice cream!
